ONLINE Make a Vegan Noodle Dish

Everyone loves noodles. Learn to make this quick and easy (vegan and gluten-free) crowd-pleaser. Kids welcome.
Ingredients are flexible. Use any veggies you like or have. Substitute any noodles (or even rice). Valentina recommends using thin noodles (the thinner the better) to take on the flavors. You can buy glass noodles at a Chinese/oriental market or health food store.
ONLINE WORKSHOP. Registrants will be sent the Zoom link at least one hour before the event.
Vegan Glass Noodle Salad
Recommended ingredients (serves 4)
1–2 packs thin (brown) rice noodles (or any kind, the thinner the better to take on the flavors) or rice
Ginger (about 1 inch)
1 pack tempeh or tofu, crumbled (or use more peas for protein)
1 cup roasted peanuts or cashews (or pistachios)
2 carrots
2–3 stalks celery, sliced
1 cup red cabbage, shredded
1 cup edamame pealed or peas
1 bunch cilantro and or Thai basil (or parsley or other herbs)
2 small red chilis (more to taste)
5 organic limes
Soy sauce, shoyu, or tamari (gluten-free)
Sesame oil (brown) or sesame seeds (or other oil or extra nuts)
Brown sugar, coconut sugar or maple syrup
