KITCHARI
Makes 2 servings
1/4 cup Yellow mung dal (split mung beans, no skin)
1/4 cup basmati rice
(NOTE: Soak these together in a glass bowl at least 8 hours prior to cooking)
1/2 tsp cumin seeds
1/2 tsp coriander seeds
1/2 tsp fennel seeds
1/2 inch fresh ginger root
Can add seasonal vegetables. Top with ghee, fresh ginger, fresh cilantro, roasted sunflower seeds…
Enjoy the meal together.
