Fresh Veggie Rolls & Light Miso Soup
Join us in this cooking workshop to make fresh, vegetarian, rice-paper rolls and light miso soup.
Please gather your ingredients and be ready to cook along with us from your kitchen!
Veggie Rolls (& sauce) are a healthy, nourishing, and simple delight to cool your body and mind on a warm day. They are fun to make and customizable depending on your taste!
Miso Soup is an easy and nutritious soup, filled with naturally-occurring probiotics and enzymes to aid in digestion.

Ingredients
Veggie Rolls [optional substitutes in brackets]
Rice papers* – 8.5 inch round
Bean thread noodles [vermicelli rice noodles or extra thin noodles]
Tofu – extra firm [firm]
Carrots [zucchini, beets]
Daikon [red radish, cucumber]
Lime [lemon]
Fresh herbs: cilantro, basil, mint
Water
Sunflower oil [any oil except olive]
Veggie Roll Sauce [optional substitutes]
Pre-soaked almonds [any nut or seed], soak for at least an hour in water to cover
Braggs Liquid Aminos [other Aminos or soy sauce]
Black pepper [other pepper]
Water
Miso Soup [optional substitutes]
Yellow miso paste* [white, light]
Wakame seaweed* [hijiki, nori]
Spinach
Zucchini
Additional vegetables optional

*Rice-papers, miso paste, and wakame seaweed can be found at any Asian foods store and many local grocery stores such as Sprouts, Whole Foods and Ralphs. (We recommended checking online or calling to check your local grocer’s stock.)
