KITCHARI
Makes 2 servings
1/4 cup Yellow mung dal (split mung beans, no skin)
1/2 cup sona masoori rice (or basmati rice)
(NOTE: Please soak these together in a glass bowl at least 8 hours prior to cooking/workshop)
1/2 tsp cumin seeds
1/2 tsp coriander seeds
1/2 tsp fennel seeds
1/2 inch fresh ginger root
GREENS
4 cups baby spinach
GHEE
1/2 cup unsalted butter
